Ingredients

  • 4 boneless, skinless chicken breasts
  • salt and black pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ¾ cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes, drained and chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 2 cups fresh spinach (about 2 handfuls)
  • 1 tbsp cornstarch (optional, for thickening)
  • fresh basil and extra Parmesan, for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides, then place them in the bottom of the slow cooker.
  2. In a medium bowl, mix together the chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, and red pepper flakes (if using). Pour this creamy mixture over the chicken breasts in the slow cooker.
  3. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and fully cooked through.
  4. If you’d like a thicker sauce, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water to create a slurry. Stir it into the sauce in the slow cooker about 30 minutes before the end of the cooking time.
  5. About 10-15 minutes before serving, add the fresh spinach to the slow cooker. Stir it into the sauce, cover, and allow it to wilt.
  6. Once done, garnish with fresh basil and a sprinkle of extra Parmesan cheese. Serve the Tuscan chicken over pasta, rice, or mashed potatoes for a complete meal!
