Ingredients

Mac and Cheese
  • 12 oz elbow macaroni (or pasta of choice)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • ¾ cup shredded Gouda cheese
  • ¾ cup shredded Swiss cheese
  • ¾ cup shredded Gruyère cheese
  • ½ tsp Dijon mustard
  • ¼ tsp smoked paprika (optional)
  • Salt and pepper, to taste
Topping
  • 1 cup crispy fried onions
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Cook the macaroni until al dente according to the package instructions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly, to form a roux.
  3. Gradually pour in the whole milk, whisking to combine. Bring to a gentle simmer and cook until the mixture thickens slightly, about 3-5 minutes.
  4. Reduce the heat to low and add the Gouda, Swiss, and Gruyère cheeses in batches, stirring until smooth.
  5. Stir in the Dijon mustard and smoked paprika, and season with salt and pepper to taste.
  6. Add the cooked macaroni to the cheese sauce and stir to coat the pasta evenly.
  7. In a small bowl, combine the crispy fried onions and Parmesan cheese.
  8. Preheat your oven to 375°F.
  9. Transfer the mac and cheese to a greased 9x13-inch baking dish. Sprinkle the fried onion mixture evenly over the top.
