Ingredients

Pasta
  • (10 oz) pasta of your choice (rotini works well)
  • 2-3 Roma tomatoes, diced
  • ¼ cup kalamata olives, diced
  • ¼ cup crumbled feta cheese
  • Fresh parsley, roughly chopped
Yogurt Sauce
  • 1 ½ cups full-fat Greek yogurt
  • 2 tbsp freshly squeezed lemon juice (zest for extra zing, optional)
  • 2 garlic cloves, finely minced or grated
  • 1 tbsp olive oil
  • ½ tsp salt (adjust to taste)
  • 1 tsp ground black pepper
Spiced Ground Lamb
  • 1 lb ground lamb (ground beef works as well)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground coriander
  • Salt and pepper to taste
Chili Butter
  • 3 tbsp butter
  • 1 tsp red pepper flakes (Aleppo pepper or crushed red chili flakes)
  • 1 tsp paprika

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. In a bowl, whisk together yogurt, lemon juice, garlic, olive oil, salt, and pepper. Stir until creamy and smooth. Set aside.
  3. Heat olive oil in a skillet over medium heat. Add the onion and sauté until softened, about 3-4 minutes.
  4. Add the ground lamb (or beef), breaking it apart with a wooden spoon. Cook until browned and no longer pink.
  5. Stir in tomato paste, cumin, paprika, coriander, salt, and pepper. Cook for 3-4 minutes until the lamb is well-coated and fragrant.
  6. Divide the pasta among plates. Add a large dollop of the yogurt sauce. Top with a generous spoonful of spiced lamb.
  7. Add tomatoes, olives, and crumbled feta. Sprinkle with fresh parsley.
  8. In a small pan, melt butter over low heat. Add red pepper flakes and paprika, swirling until fragrant. Drizzle over the pasta for an extra burst of flavor.
