Ingredients

Crust
  • 1 ¼ cups all-purpose flour
  • ½ cup cold unsalted butter, cubed
  • 1 tbsp sugar
  • ¼ tsp salt
  • 3-4 tbsp ice water
Filling
  • 4-5 large green apples, cored and thinly sliced
  • 2 tbsp lemon juice
  • ¼ cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 2 tbsp unsalted butter, thinly sliced
Glaze (optional)
  • 2 tbsp apricot jam
  • 1 tbsp water

Instructions

  1. In a food processor or by hand, combine the flour, sugar, and salt. Add the cold butter and pulse (or use a pastry cutter) until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, 1 tablespoon at a time, until the dough just comes together.
  3. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. While the dough chills, core and thinly slice the green apples. Toss the apple slices in a bowl with lemon juice to prevent browning.
  5. In a small bowl, mix the brown sugar, granulated sugar, cinnamon, nutmeg, vanilla extract, and flour. Toss the apple slices with this sugar mixture until evenly coated.
  6. Preheat your oven to 375°F.
  7. On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter and about 1/8 inch thick. Transfer the dough to a tart pan with a removable bottom (about 9-10 inches in diameter), pressing it gently into the bottom and up the sides. Trim any excess dough.
  8. Arrange the apple slices in a circular pattern, slightly overlapping each slice in a spiral, starting from the outside and working toward the center.
  9. Dot the apples with small pieces of butter.
