Ingredients

Salad
  • 4 cups arugula
  • 4 ripe peaches, sliced
  • 8 slices of prosciutto, torn into pieces
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • ¼ cup fresh basil leaves, torn
  • ¼ cup toasted pine nuts
Balsamic Vinaigrette
  • 3 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey (or maple syrup)
  • cup extra-virgin olive oil
  • 1 small garlic clove, minced
  • salt and pepper, to taste

Instructions

  1. In a large bowl or platter, arrange the arugula as a base. Top with peach slices, prosciutto pieces, mozzarella balls, basil leaves, and toasted pine nuts.
  2. In a small bowl, whisk the balsamic vinegar, Dijon mustard, honey, and olive oil until well combined. Add the garlic and season with salt and pepper to taste.
  3. Drizzle the dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
