Begin with fresh zucchini, sliced into thin rounds. You will need three small mixing bowls to create the coating. In the first bowl add the flour. In the second bowl, whisk the egg and milk together. In the third bowl, combine the bread crumbs, parmesan cheese, and seasonings. Each zucchini slice gets dipped in first the flour, then the egg, and finally the bread crumb mixture. Finally, they take a quick trip to the air fryer, where they emerge golden brown and irresistibly crispy.
While the zucchini crisps in the air fryer, prepare the herby Greek yogurt dip. Greek yogurt forms the creamy base, bringing richness and a pleasant tang. Air Fryer Zucchini with Herby Greek Yogurt Dip
Ingredients
- 1 large zucchini, sliced
- 1 large egg
- 2 tbsp milk
- ¼ cup all-purpose flour
- ½ cup panko bread crumps
- ½ cup grated parmesan cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp oregano
- ½ tsp parsley
- salt and pepper to taste
- ½ cup greek yogurt
- half a lemon, juiced
- 1 tsp fresh parsley, finely chopped
- 1 tsp chives, thinly sliced
- ½ tsp fresh dill, chopped
- half a clove of grated, garlic
- salt and pepper to taste
Instructions
- Add the flour to a mixing bowl.
- In second bowl, whisk the egg and milk together.
- In a third bowl, combine panko bread crumbs, parmesan cheese, garlic powder, onion powder, oregano, parsley, and salt and pepper.
- Dip each zucchini slice in the flour, then the egg mixture, followed by the bread crumb mixture.
- Add the zucchini to the air fryer basket in a single layer and fry at 400°F for 8 minutes, flip halfway through.
- While the zucchini is cooking make the dip. In a small mixing bowl, combine greek yogurt, juice of half a lemon, fresh parsley, green onion, fresh dill, grated garlic, and salt and pepper to taste.
- Serve with the zucchini chips and enjoy!
