Ground Turkey Burrito Bowl
Ingredients
- 2 cups rice
- 1 tbsp avocado oil
- 1 lb ground 90% lean turkey
- 4 cloves of garlic, minced
- ½ cup onion, diced
- 1 tbsp tomato paste
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp smoked paprika
- ½ tsp oregano
- ¼ cup chicken broth
- salt and pepper to taste
- black beans
- roasted corn
- avocado
- shredded romain lettuce
- pico de gallo
- cotija cheese
- jalapeños
- sour cream
- fresh cilantro
Instructions
- Cook the rice according to package instructions.
- In a skillet on medium-high heat, add the avocado oil and ground turkey breaking it up as it cooks.
- When the ground turkey begins to brown, add the garlic and onions. Cook until there is no longer any pink. Drain liquid and return meat mixture to the pan.
- Next lower the heat to medium. Add the tomato paste, cumin, chili powder, smoked paprika, chicken broth, salt and pepper to the skillet with the cooked turkey. Combine well and cook for 2 minutes or until fragrant.
- Divide the cooked rice into serving bowls and top with the ground turkey mixture.
- Add your desired topping, drizzle with lime juice, and garnish with cilantro. Enjoy!
