Lemon Garlic Parmesan Shrimp Pasta
Ingredients
- 8 oz linguine pasta
- 2 tbsp olive oil
- ½ shallot, finely chopped
- 3 cloves garlic, minced
- ¼ tsp red pepper flakes (optional)
- 12 large shrimp, peeled and deveined
- 2 tbsp butter
- 2 tbsp heavy cream
- ¼ cup fresh parsley, chopped
- ¼ cup parmesan cheese, grated
- 1 lemon, zest and juice
- salt and pepper, to taste
Instructions
- Cook the linguine pasta according to package instructions in a large pot of salted water.
- In a skillet, heat olive oil over medium heat and add the shallot, minced garlic and red pepper flakes if desired. Cook until fragrant or about 1 minute.
- Add the shrimp to the skillet and cook until they turn pink and opaque.
- Turn heat to low and add the butter and heavy cream. Stir until melted and creamy, about 1 minute
- Remove from heat. Add the freshly squeezed lemon juice and zest, chopped parsley, and grated parmesan cheese to the skillet. Mix well to combine all the ingredients.
- Once the pasta is cooked, strain and add it to the skillet with the shrimp and sauce.
- Season with salt and pepper to taste and stir until everything is well incorporated.
