Ingredients

  • 8 oz linguine pasta
  • 2 tbsp olive oil
  • ½ shallot, finely chopped
  • 3 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • 12 large shrimp, peeled and deveined
  • 2 tbsp butter
  • 2 tbsp heavy cream
  • ¼ cup fresh parsley, chopped
  • ¼ cup parmesan cheese, grated
  • 1 lemon, zest and juice
  • salt and pepper, to taste

Instructions

  1. Cook the linguine pasta according to package instructions in a large pot of salted water.
  2. In a skillet, heat olive oil over medium heat and add the shallot, minced garlic and red pepper flakes if desired. Cook until fragrant or about 1 minute.
  3. Add the shrimp to the skillet and cook until they turn pink and opaque.
  4. Turn heat to low and add the butter and heavy cream. Stir until melted and creamy, about 1 minute
  5. Remove from heat. Add the freshly squeezed lemon juice and zest, chopped parsley, and grated parmesan cheese to the skillet. Mix well to combine all the ingredients.
  6. Once the pasta is cooked, strain and add it to the skillet with the shrimp and sauce.
  7. Season with salt and pepper to taste and stir until everything is well incorporated.
  8. Serve and garnish with additional grated parmesan and parsley if desired. Enjoy!
