Mediterranean Stir Fry with a Spicy Yogurt Sauce
This Mediterranean stir fry is full of freshness and vibrancy. It features a colorful medley of bell peppers, zucchini, cherry tomatoes, red onions, garlic, and artichoke hearts. These veggies provide a burst of colors, flavors, and essential nutrients that make this dish not only delicious but also incredibly healthy.
This dish is very simple to make. I stir fry my vegetable medley in a skillet or wok along with fruity Kalamata olives and nutty chickpeas. The stir fry wouldn't be complete without the mix of Mediterranean herbs, oregano, basil, and thyme, to complete it.
I usually serve this dish with couscous for its fluffy light texture and tender bite. Couscous is quick to prepare and acts as an excellent base for absorbing the rich flavors of the stir-fried ingredients. You can also serve this dish with quinoa or rice.
To add a spicy kick, I make a spicy yogurt sauce that combines greek yogurt with sriracha, lemon juice, cumin, cayenne pepper, and a hint of garlic. This create a spicy creamy sauce that contrasts beautifully with the mildness of couscous and the savory stir-fry. This Mediterranean-inspired stir fry is versatile and wholesome, making it a perfect weeknight dinner or a star at your next gathering.
Mediterranean Stir Fry with a Spicy Yogurt Sauce
Ingredients
- 1 tbsp olive oil
- ½ cup red onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- ½ zucchini, sliced and cut in half
- ½ cup cherry tomatoes, halved
- 1 cup chickpeas
- ¼ cup kalamata olives, halved
- ½ cup artichoke hearts
- ½ tsp oregano
- ½ tsp basil
- ¼ tsp thyme
- salt and pepper to taste
- ¼ cup greek yogurt
- ½ tsp sriracha
- ½ garlic glove, grated
- 1 tsp lemon juice
- ¼ tsp cumin
- ⅛ tsp cayenne pepper
- salt and pepper to taste

Instructions
- Heat olive oil in a skillet over medium heat.
- Add the onion and garlic, and sauté for 2 minutes or until softened and fragrant.
- Add the red bell pepper, zucchini, and chickpeas. Stir fry for 8 minutes.
- Add the cherry tomatoes, kalamata olives, and artichoke hearts. Continue to stir fry for 4 minutes.
- While that's cooking make the spicy yogurt sauce. In a small mixing bowl combine the greek yogurt, sriracha, lemon juice, cumin, cayenne, and salt and pepper to taste. Add water 1 tsp at a time to create a drizzle consistency.
- Turn off the heat and season stir fry with with oregano, basil, thyme, salt, and pepper. Stir well to combine.
- Divide the stir fry into two servings and drizzle with the spicy yogurt sauce. Serve with rice, quinoa, couscous, or enjoy on it's own!
