The Best Meatloaf
Ingredients
- 1 tbsp butter
- ¼ cup onion, finely chopped
- 2 garlic cloves, minced
- 2 lbs ground beef 85% 90% lean
- 2 large eggs
- 2 tbsp ketchup
- 3 tbsp fresh parsley, finely chopped
- ¾ cup panko bread crumbs
- 3 tbsp sour cream
- 1 tbsp Worcestershire sauce
- ½ tsp paprika
- 1½ tsp salt
- ¼ tsp pepper
- ½ cup ketchup
- 1 tsp apple cider vinegar
- 2 tsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper to taste
Instructions
- Line a 9”x5” loaf pan with parchment paper and preheat oven to 350°F.
- In a medium skillet over medium heat, melt the butter and cooked the chopped onions and garlic for 1-2 minutes or until onions turn translucent and garlic is fragrant.
- In a large mixing bowl, add all of the ingredients for the meatloaf. Mix well to combine.
- Add meat to the loaf pan, gently press meat down and shape evenly. Bake meatloaf for 40 minutes.
- In a small mixing bowl, combine all of the ingredients together for the glaze. Increase the oven temperature 400°F. Spread the glaze over the meatloaf then return to the oven and bake for an additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing.
- I suggest serving with mashed potatoes. Enjoy!
