Simple Fennel and Arugula Salad
This simple fennel and arugula salad is easy to make and delicious. At its heart, this salad features thinly sliced fennel, known for its delicate aniseed flavor, which provides a crunchy, slightly sweet contrast against the bold and peppery arugula leaves.
The dressing is also simple but packed with flavor—a whisked blend of extra virgin olive oil, fresh lemon juice, grated garlic, dijon mustard, seasoned with a touch of salt and cracked black pepper. This light, zesty dressing enhances the natural flavors of the fennel and arugula without overpowering them, adding a bright acidity that elevates the dish. You can also add some fresh herbs like parsley, dill, or basil.
For the final touch, shavings of Parmesan cheese are scattered over the top, adding a savory depth and a hint of richness that perfectly complements the fresh, green notes of the salad. Optionally, a sprinkle of toasted pine nuts can add a nutty crunch, introducing a wonderful texture contrast that makes every bite interesting.
This simple fennel and arugula salad is the perfect side dish for a healthy dinner or an easy quick lunch. This salad promises to refresh and invigorate the palate with its clean and distinct flavors.
