Banana Bread with Brown Butter Glaze
In the world of baked goods, banana bread holds a special place in the hearts of many, cherished for its moist texture, comforting flavor, and the way it lovingly rescues overripe bananas from being thrown out. However, when draped with a sinfully delicious brown butter glaze, traditional banana bread transforms into an indulging treat.
This recipe begins with mixing together your dry ingredients in a medium sized mixing bowl. In a second bowl, using an eclectic mixer, the sugars and butter are combined into a thick paste like consistency. Ripe bananas form the backbone of this recipe, ensuring every slice is imbued with the fruit's natural sweetness and moisture. The addition of greek yogurt helps creates a batter that bakes up into a bread that's delightfully moist and rich in flavor.
The brown butter glaze, a concoction that might seem simple at first glance but is transformative in taste, brings this banana bread recipe to the next level. Browning the butter is a culinary alchemy that deepens its flavor, bringing out nutty, caramel notes that make the glaze irresistibly complex. When whisked with powdered sugar and a touch of milk, it becomes pourable, ready to cover the banana bread in its golden buttery goodness.
Serve this for breakfast or brunch, a delightful afternoon snack, or a comforting dessert. Pair it with a steaming cup of coffee in the morning or a glass of milk in the evening to complement the rich flavors. This banana bread with brown butter glaze offers a reminder that simple ingredients can be transformed into something truly delicious.
Banana Bread with Brown Butter Glaze
Ingredients
- 1½ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ⅓ cup butter, at room temperature
- ½ cup packed light brown sugar
- ½ cup granulated sugar
- 2 large eggs, at room temperature
- 2 medium, very-ripe bananas
- 1 tsp vanilla extract
- ½ cup greek yogurt
- 4 tbsp unsalted butter
- 1 cup confectioner's sugar
- pinch of salt
- 1 tsp vanilla extract
- 3 tbsp milk
Instructions
- Preheat the oven to 325°F and grease a 9×5 loaf pan.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a second bowl, using a whisk or an electric mixer, mix together the melted butter and sugars until you reach a paste-like consistency.
- Add in the mashed bananas followed by the eggs, vanilla, and yogurt.
- Once all of the wet ingredients are mixed together, fold in the dry ingredients. Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 1 hour to 1 hour 15 minutes or until a toothpick comes out clean. Let it cool completely before removing from the pan.
- Melt the butter over medium heat in a small skillet. When foaming subsides, continue cooking, stirring the pan frequently, until the butter is golden brown and has a nutty aroma. Butter can burn easily so watch closely.
- Immediately pour brown butter into a bowl. Leave behind as much of the dark solids in the pan as possible. Let cool for a minute.
- Gradually add the powdered sugar to the brown butter, whisking to combine. Whisk in vanilla extract and milk to thin the glaze to a pouring consistency.
- Drizzle the brown butter glaze over the cooled banana bread. Enjoy!
