Lemon Garlic Butter Baked Cod
Ingredients
- 2 tbsp butter, softened
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ⅛ teaspoon paprika
- salt, to taste
- 1 lb cod fillet
- 1 lemon
- 1 tbsp green onion, chopped
- 1 tsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400ºF
- Mix butter, olive oil, garlic, paprika, and salt in a small bowl to make the garlic butter.
- Spread a small amount of garlic butter on the bottom of a medium-sized baking dish, and place the cod fillets on top. Add the remainder of the garlic butter mixture on top of the fish, and spread it until the fish is evenly coated.
- Cut half of the lemon into slices and place them around the cod. Cut the remaining 1/2 lemon into wedges for serving.
- Bake in the oven until the cod flakes easily with a fork, about 20 minutes.
- For serving, sprinkle the cod with fresh herbs and a squeeze of lemon juice. Enjoy!
