Ingredients

  • 3 (5oz) cans of tuna, drained
  • 1 english cucumber, diced
  • ½ red onion, thinly sliced
  • cup kalamata olives, quartered
  • 2 large avocados, diced
  • ¼ cup fresh parsley, chopped
  • 1 clove of garlic, minced
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • salt and pepper, to taste

Instructions

  1. Combine the tuna, cucumber, red onion, olives, avocado, and parsley in a large bowl. Gently toss to combine.
  2. In a small bowl, whisk together the garlic, lemon juice, olive oil, salt and pepper. Pour the dressing over the salad and gently toss until everything is evenly coated.
