Tuna Avocado Salad
Ingredients
- 3 (5oz) cans of tuna, drained
- 1 english cucumber, diced
- ½ red onion, thinly sliced
- ⅓ cup kalamata olives, quartered
- 2 large avocados, diced
- ¼ cup fresh parsley, chopped
- 1 clove of garlic, minced
- 1 lemon, juiced
- 2 tbsp olive oil
- salt and pepper, to taste
Instructions
- Combine the tuna, cucumber, red onion, olives, avocado, and parsley in a large bowl. Gently toss to combine.
- In a small bowl, whisk together the garlic, lemon juice, olive oil, salt and pepper. Pour the dressing over the salad and gently toss until everything is evenly coated.
